2005 Cabernet Sauvignon
Announcing the much anticipated 2005 La Sirena Cabernet Sauvignon! This is our 10th Anniversary release of the Cab. and no doubt, one of the best ones we have made. This wine continues to display the elegance, balance, and beautiful opulence expected from la Sirena. Cabernet is what I am best known for and my favorite wine to make. So here’s the scoop.
Just the Facts:
- Harvest Dates – Oct. 4, Oct 12, Oct 14, 2005
- Blend is 90% Cabernet Sauvignon, 8% Merlot, 2% Cab Franc. (much closer to the blend I always made for Screaming Eagle)
- Some Chemistry - 14.7% alc., T.A. 0.58, pH 3.68
- 100% French oak barrels, 22 months, variety of coopers and ages
- Bottling date: July 6, 2007 Release date: June 15, 2008
- Tiny Production: 457 cs. (750 ml. bottles), 150 magnums (1.5L) etched, gold leaf, signed, 8 3L, 8 6L, 1 18L Charity bottle for Heifer International. (Much less wine than last year.)
Tasting Notes: (tasted 6/17/08 by HPB)
Yum! (A technical term) The 2005 Cab. Sauv. is an opulent dark cherry color. The nose is open and shows ripe fruit, rose petal, blackberry, and cassis. Layers of spice, tobacco, cedar, and hints of toasty French oak lead you to flavors that match the aromas. Wonderful purity. Very silky, yet flavorful, the wine simply flows across the palate. Amazing length, as I write these notes, I can still taste the wine minutes later. Delicious wine from a great vintage.
